  • Ingredients
  • 1 liter of dashi (bottom of fish especially bonito or tuna)
  • 60 grams of miso
  • 200 grams of carrot
  • 200 grams of shiitake mushrooms, sliced
  • 150 grams of round onion, julienned
  • 50 grams of wakame seaweed hydrated and cut in brunoise
  • 100 grams of sliced chives

Preparation

  • Boil 700 ml of dashi in a saucepan and set aside the other 300 ml.
  • Dissolve the miso in the 300 ml of dashi and reserve until it is time to add it to the preparation.
  • In the rest of the dashi, cook the vegetables until tender. Subsequently, incorporate the algae.
  • Remove the saucepan from the heat and pour the miso, mixing well.
  • Finally, serve the soup hot, sprinkled with a little chives.

Miso Soup Recipe No. 2

  • Ingredients
  • 175 grams of tofu
  • 1 liter of water
  • 45 grams of miso
  • 50 grams of dehydrated wakame seaweed cut in brunoise
  • 100 grams of onion cut in fruit salad
  • 100 grams of cut in Macedonia
  • 100 grams of carrot, cut in fruit salad
  • 100 grams of cabbage cut into chiffonade

Preparation

  • In a saucepan, boil 750 ml. of water and dilute the miso.
  • You must heat the other 250 ml of water and, later, before it begins to boil, add the algae to hydrate.
  • Add the tofu to the broth along with the other ingredients, letting the soup cook for several minutes.
  • Remove from heat and incorporate the miso, mixing well and constantly.
