Ghapama

Kufta

Meat is cut into balls or flat circles, which are then dropped into a pot of boiling water with a glass of red wine added beforehand. The dish will be so soft and delicious if the kufta is prepared correctly and in accordance with the instructions that it will melt in your mouth.

 

Khash

Khash is a scalding, incredibly fatty soup prepared from cow legs. This soup takes a very long time to cook; it is started on the stove in the evening and finished the following morning.

The soup is simmered all night on a tiny fire, then served the the next day with dried Lavash and garlic. Lavash that has already been dried is cut into small pieces and added to the soup to give it the appearance of porridge.

Real devotees of khash take the mass and eat it with a piece of soft, fresh lavash with their hands. Khash is typically paired with alcohol by Armenians.

Khash was the staple diet of the underclass in ancient times, which is difficult to imagine. After all, large social gatherings in the modern era are inconceivable without this delectable and savory soup, which also relieves hangover symptoms, on a winter or fall morning.
